Lavender Gin Sour
11/2oz Empress 1908 Gin
1/2oz fresh Lemon juice
1/2oz Lavender Simple Syrup*
1 Egg White
Dried Lavender (for garnishing)

* For the syrup: Add 1/2 cup water, 1/2 cup sugar and 1 tbsp dried lavender to a small saucepan over medium heat until all sugar dissolves. Reduce heat and simmer for 10-15 minutes. Cool, strain and voilà! Recipe makes enough for approx. 5 cocktails. Doble to keep some extra for later!

METHOD: Add ingredients to cocktail shaker and shake vigorously for about 30s. Add ice and shake again to chill. Strain into your favourite cocktail glass and garnish with dried lavender buds.
