Homemade Gin (infusion)

Yields 750ml Bottle

Ingredients:

• 1 (750ml) bottle of vodka
• 2 tbs dried juniper berries
• 3/4 tsp coriander seed
• 1/4 tsp ground allspice
• 1/4 tsp fennel seed
• 3 green cardamom pods
• 3 black peppercorns
• 1 fresh bay leaf
• 1 sprig fresh rosemary
• 1 piece fresh lemon peel
• 1 sprig fresh lavender
• 1 coffee filter

Instructions:

1. Sterilize a glass bottle with hot water, soapy water
2. Add all of the solids to the bottle
3. Pour in the vodka
4. Give it a good shake. Let infuse overnight. The berries and the seeds will rise to the top. That’s fine. make sure that they’re covered with vodka. Shake the bottle every once in a while.
5. Strain and bottle – strain it once and then run through a coffee filter a couple of times to improve the clarity.
