Swann Lounge Gin

Ingredients
- 1 1.75-liter bottle 100-proof vodka (such as Smirnoff Blue Label)
- 2 tablespoons juniper berries
- 1 teaspoons coriander seeds
- 2 fruit (3-3/4″ dia) grapefruits
- 1 fruit (2-3/8″ dia) lemon
- 1 fruit (2-7/8″ dia) orange
- 4 clove whole cloves
- 1/2 teaspoon angelica root
- 1/4 teaspoon cassia bark
- 1/4 teaspoon fennel seeds
Steps
- Add the vodka into a large jar or bowl.
- Place the spices and citrus peels into a muslin bag or tie them up in a piece of cheesecloth.
- Submerge in the vodka and let stand at room temperature for 3 days.
- Remove the bag and rebottle the liquid.
Michael Haggerty created this gin when he was the head bartender at Philadelphia’s Four Seasons hotel and served it in drinks at the hotel’s bar, then called Swann Lounge.
Its flavors are bold and assertive, with grapefruit and clove holding center stage, allowing the gin to hold its own in a wide variety of cocktails. Haggerty even used it in place of bourbon or rye in an Old Fashioned.
Even though the citrus and baking-spice notes hold center stage in this gin, a number of botanicals play subtle supporting roles. In addition to the essential juniper and coriander, plus the prominent citrus peels and clove, the neutral overproof vodka gets infused with angelica root, cassia bark and fennel seeds, rendering a complex and well-rounded gin that will shine in any spirit-forward cocktail.
