DIY a London Dry
Source: Let it be Gin
Ingredients:
• 750ml decent quality vodka
• 2 tbs of juniper (more if you like juniper-forward gin)
• 1 tsp of coriander seeds
• 2 peppercorns
• 2 cardamom pods
• 1/2 tsp of Angelica root
• 1/2 tsp of licorice root
• 1/2 inch piece of ginger cut into smaller slices
Method:
• Sterilise a glass bottle with boiling water.
• Add the botanicals.
• Top up with vodka.
• Leave to infuse in a cool dark place for 24 hours.
• Taste the infusion – it should have taken on some of the juniper flavour. Add any extra botanicals you want to boost their flavour.
• Leave for up to another 24 hours, giving the bottle a bit of a shake once in a while. Beware of leaving it too long and over-infusing the mixture.
• Taste the gin again and if you’re happy, filter out all the botanicals using a sieve. Filter again using a paper coffee filter for any left over sediment.
• Leave the liquid to sit for a couple of days and then filter again if necessary.
• Bottle and label your gin.
• NOTE: Your gin will not be clear like distilled gin, but this doesn’t affect the taste.
