5 O’Clock Chai Gin

Ingredients:
- 750ml decent quality vodka
- 2 tbs of juniper
- 1 tsp of coriander seeds
- 2 peppercorns
- 2 cardamom pods
- 1 tea bag of Chai (we used 4 O’Clock Chai brand)
Method:
- Sterilise a glass bottle with boiling water.
- Add the botanicals and tea bag.
- Top up with vodka.
- Leave to infuse in a cool dark place for 24 hours.
- Taste the infusion – Add any extra botanicals you want to boost their flavour.
- Leave for up to another 24 hours, giving the bottle a bit of a shake once in a while. Beware of leaving it too long and over-infusing the mixture.
- Taste the gin again and if you’re happy, filter out all the botanicals using a sieve. Filter again using a paper coffee filter for any left over sediment.
- Leave the liquid to sit for a couple of days and then filter again if necessary.
- Bottle and label your gin. The gin was named 5 O’Clock Chai, because Let It Be Gin tastings are usually at 5pm.
- NOTE: Your gin will not be clear like distilled gin, but this doesn’t affect the taste.
